Fried rice is stir fried steamed rice, mixed with other ingredients such as vegetables and seasoning. These are generally made out of leftover rice and vegetables leading to countless variations.
Today i am sharing street food style fried rice using basic vegetables and rice. You can add any of the vegetables of you choice like mushrooms, paneer (cottage cheese), french beans, capsicum etc
steamed rice 3-4 cup
oil 2 tbsp
cumin seeds 1/2 tsp
salt to taste
red chilly powder 1/2 tsp
pav bhaji masala 2 tsp
onion 1 medium sized (thinly sliced)
carrot 2 medium sized(thinly sliced)
peas 1 cup(shelled)
ginger fine paste
garlic fine paste
In a deep pan heat oil, once oil is hot, add cumin seeds and cook till it starts crackling.
Add ginger garlic paste and cook it for for a minute, Add onions into it and saute for about 2-3 minutes.
Now Add finely chopped vegetables. You can add any vegetable of your choice or availability. I have used basic vegetables like carrot and peas and saute it for more 2-3 minutes or till it softens.
Put all the seasonings such as salt, red pepper, pav bhaji masala and give it a stir.
Finally add steamed rice and mix it properly.
For making steamed rice, take one part rice and two part water. Boil water in a pan, add salt to taste and add rice. cover it with lid. let it cook for till rice cooked properly (or rice absorbs all the water).
